I was rushing to make dinner for my son on Sunday (while still enormously full from Korean barbeque) and resorted to packaged noodles (not GF) and octodogs.
I packed up the leftovers for my own lunch the next day... and then ended up not going to work.

ReplyDeleteAs of right now, my son has not been officially diagnosed with Celiac(as I mentioned in earlier posts) -- we see the GI specialist later this month and, at that point, I expect we'll have the final dx and will go gluten-free. (Until he is officially diagnosed, we've been advised to continue feeding him gluten so that the tests will be effective. Since he's asymptomatic, it's not a problem for him.)
This blog is solely a personal journal of my adventures in making bentos (which began as a way to make lunch more fun with unusual elements that aren't limited to the general American schoolchild's lunch of sandwiches made on gluten-containing breads.)
I would expect this to be a true "gluten-free bento blog" by this summer... at which point, I'm less likely to be making bentos while my son is on summer vacation. Check back in the fall if you're interested.
